Rolled omelette with parsley

Ingredients
Serves 4:
2 garlic cloves
6 eggs
1 large bunch of fresh parsley
60g parmesan
5 tablespoons olive oil + a dash for frying
salt and pepper
Instructions
Peel and slice the garlic cloves.
Wash the parsley and dry using a clean cloth. Remove the leaves from the stems and chop. Grate the parmesan.
In a large bowl, combine the garlic, parsley and the grated parmesan. Pour in the olive oil. Season with some salt and pepper. Mix and set aside.
In a large bowl, beat the 6 eggs. Season with salt and pepper beforehand.
In a frypan, heat a dash of olive oil. Spread the egg mixture around the frypan. Leave to cook for about 3 minutes.
Flip it over gently using a large plate and then cook the other side for about 2 minutes. Slide the omelette onto a dish. Sprinkle the parsley evenly over the omelette and then roll the omelette to make a sausage shape.
Cut into slices using a knife. Serve.
